Cooking Tips for Best Results

🌾

Choosing the Right Atta

Sharbati atta is ideal for soft chapatis and sweets. Lokwan gives earthy flavour for parathas. Malviya is best for multi-grain breads and baking.

πŸ’§

Water Temperature Matters

Use warm water (not hot) while kneading atta. It activates gluten proteins evenly, resulting in softer, more pliable dough that rolls beautifully.

⏰

Always Rest the Dough

Allow kneaded dough to rest covered for 20–30 minutes. This relaxes the gluten, making it easier to roll and producing softer chapatis that stay soft longer.

πŸ«™

Storage Tips

Store atta in an airtight container in a cool, dry place. Use within 30–45 days of opening for maximum freshness. Refrigerate during monsoon season to prevent weevils.

πŸ”₯

Perfect Tawa Temperature

A properly preheated tawa (medium-high heat) is key to puffed chapatis. If too cold, chapati becomes stiff; if too hot, it burns without cooking through.

πŸ§‚

Salt in the Dough

Always add a pinch of salt while kneading β€” it strengthens the gluten structure, enhances flavour, and helps chapatis stay soft. Never knead without salt.
